Another experiment with bread consumption, this time not a sourdough bread and there did seem to be a difference. This time I tried a whole wheat demi-baguette (270 grams) and had it with avocado oil. I would have expected that consuming some fat with the bread would have attenuated the increase in blood glucose. It didn’t. Here’s the table of my readings.

Interesting to note here in comparison t the prior experiment with sourdough bread:

Of course there are differences in other foods consumed, what I did during the day and so on. And of course, n=1.

Note that the one odd reading at 8:45 pm makes the chart look odd. Maybe I should have thrown it out, but it’s the measurement I got so I just left it.
