Having a dinner based around coconut milk. Starting with a new blood glucose meter, the One Touch Ultra 2. I’m not sure how different the accuracy is from my previous meter (Accu-Chek Compact Plus) as I haven’t compared the readings from the two side by side, but I don’t see any glaring differences. Anyways, coconut in its various configurations is supposed to be a low Glycemic Index food, so I mixed it with some potatoes and sweet potatoes as well as other vegetables and a can  of salmon. Here’s a table with the results.

I’m not sure what to think of the variation between 10 and 12. Maybe it’s just the bodies natural fluctuations or maybe some amount of measurement error (whether on my part or the meter’s). But overall the change in blood glucose is rather moderate despite the presence of a couple of starchy vegetables in the meal.
